This past week was the first Wet Wednesday of the Summer of 2010--and what perfect weather we had!! The thermometer hit 40 degrees!!
Joanne was our hostess this week and the inspiration for this post! Normally the expectation for the Wet Wednesday host is that she does nothing other than unlock the pool gate. (If you are coming, bring your own food and drinks). But Joanne wowed us with two fantastic recipes that just had to be shared. Nothing goes better poolside than having an awesome guacamole dip and a great slushy drink to wash down the tortilla chips! Our visit was definitely worth dodging a few water guns.

Joanne's Most Awesome Guacamole
Ingredients
1 bag of ripe avocado
3 large limes
1 tsp. garlic finely chopped
1 handful of fresh cilantro finely chopped
3 tbs. Hellmans Real Mayonaise
sprinkle of salt and pepper
1. Peel and mash avocado
2. Add the garlic, cilantro, and mix
3. Gradually add lime juice while stirring to ensure it does not become liquidy
4. Fold in mayo. Refrigerate or enjoy immediately.

Joanne's Most Awesome Slushy Drink
1 can of pink lemonade from concentrate
Fill the can once with water
1 handful of ice cubes
2 glugs of Smirnoff vodka ( I think that's about 3/4 of a cup)
Blend on high until frothy bubbes appear on top. A very refreshing summer sipper. Minus the vodka and it makes a pretty cool treat for the kids who enjoy a cool drink that's not too sweet. Pour it in ice cube trays and add a decorative toothpick and you have fun mini popscicles!
